How to Make Nigerian Jollof Rice

Ingredients (serves 4)

Tomato sauce

  • Tomatoes … 4 (or 400g canned tomatoes)
  • Red bell pepper ... 2
  • Onion … 1
  • Chili peppers … 1–2 (adjust for spiciness)
  • Salad oil ... 3 tablespoons

Rice

  • Rice (long-grain)… 2 go (approx. 300g)
  • Chicken bouillon … 500 ml
  • Bay leaf ... 1 leaf
  • Dried thyme... 1 teaspoon
  • Curry powder ... 1 teaspoon (to taste)
  • Salt ... appropriate amount
  • Black pepper ... appropriate amount

Ingredients

  • Chicken (thigh meat, etc.)... approximately 300g
  • Vegetables (carrots, green beans, peas, etc.)... as needed

How to make them

① Make the tomato sauce base

  1. Chop the tomato, red bell pepper, onion 1/2, and_ chili pepper into chunks.
  2. Place in a blender and blend until smooth.

② Reduce the sauce

ベースを煮詰める工程です。
  1. Heat 3 tablespoons of salad oil in a pot.
  2. Add the purée and simmer over medium heat for 10 to 15 minutes.
  3. Heat until the liquid reduces and thickens slightly.

Points

  • By removing moisture, the rice won't become mushy.
  • A little oil floating on the surface is a good indicator.

③ Grill the chicken

鶏肉に調味料をまぶし、焼きます。
  1. Lightly season the chicken with salt, pepper, and thyme.
  2. Sear in a frying pan until lightly browned on the surface.

※It's okay if it's not cooked all the way through.

④ Cook with rice

鍋に米とそのほかの具材を入れ軽く混ぜます。
  1. In another large pot, heat 1 tablespoon of oil.
  2. Sauté the remaining onion 1/2 onion (finely chopped).
  3. Add the reduced tomato sauce and lightly sauté (1–2 minutes).
  4. Add chicken bouillon, bay leaf, and curry powder.
  5. Add the washed rice and stir gently.
  6. Place chicken and vegetables on top.

⑤ Cook

  1. Put the lid on.
  2. Simmer for 20–25 minutes.

※Do not stir halfway through for fluffier results.

⑥ Steam and finish

  1. Turn off the heat and let it steam for 10 minutes.
  2. Gently mix everything together.
  3. Season with salt and pepper.

Presentation

Arrange on a plate and add the next dish for an authentic presentation.
