How to Make Umm Ali
Ingredients (Serves 3–4)
Fabric
- Phyllo dough or frozen pie crust … 100–150g
※Croissants or sliced bread can also be used as substitutes.
Milk-based
- Milk … 400ml
- Whipping cream … 100ml (adds richness)
- Sugar … 3 to 5 tablespoons (adjust to taste)
- Vanilla extract … a little (if available)
Nuts and Dried Fruits
- Almond
- Pistachio
- Walnut
- Raisins
※Use approximately 50–80g total as a guideline, adjusting to taste.
Flavoring (to taste)
- Cinnamon
- Cardamom
- Rose water or orange blossom water (a few drops)
How to make them
① Bake the dough

- Lightly bake filo dough or pie crust in an oven or_ toaster.
- When the surface turns slightly golden and crisp, remove it.
- Break into bite-sized pieces by hand.
Key Point: Thoroughly cooking it here achieves a texture where the top is crispy and the inside is creamy.
② Make the milk base

- In the pot
- Milk
- Whipped cream
- Sugar
put in.
- Melt the sugar over low to medium heat while warming.
- Turn off the heat before it boils.
- Add vanilla extract or flavoring
There is no need to bring it to a boil.
③ Stack the ingredients

Place the following ingredients in the heatproof dish in this order.
- Crumbled dough
- Nuts and Raisins
- Pour warm milk
Add milk until it just covers everything—enough to soak everything slightly.
④ Bake in the oven

- Preheat the oven to 180°C
- Bake for about 15 to 20 minutes.
Once the surface has a light golden brown color, it's done.
Finishing
Once it's baked
- Pistachio
- Almond
Sprinkle a little on top for a better appearance and aroma.
