How to Make La Bouillie

As I mentioned in my previous post, there isn’t a set recipe for La Bouillie.

The ingredients used vary by region and household, and this is one of the distinctive features of this dish.

In this post, I’ll introduce one of those combinations: rice, millet flour, peanut butter, milk, and sugar.

Ingredients

  • Rice … 100g (about 1/2 go)
  • Water … 500 ml
  • Millet flour … 1.5 tablespoons
  • Unsweetened peanut butter … 1.5 tablespoons
  • Milk … 100–150 ml
  • Sugar … 1 to 2 tablespoons
  • Salt … a pinch
  • Lemon juice … 1–2 teaspoons (to taste)

*You can use millet flour sold as “miscellaneous grain flour (such as aw, kibi, and hie)” or “millet flour.”

How to cook them

① Cook the rice

Put the rice and water in a pot and place it on the stove.

Once it comes to a boil, reduce the heat to medium-low, and simmer for about 10 to 15 minutes, until the rice is tender.

Stir occasionally from the bottom to prevent it from sticking.

② Melt the peanut butter

In a separate bowl, add about 3 to 4 tablespoons of peanut butter and water, and mix well.

Instead of adding peanut butter straight from the jar to the pot, it mixes more easily if you dissolve it in water first.

③ Mix the millet flour with water

In a separate bowl, combine 2 to 3 tablespoons of millet flour and water, and stir until there are no lumps left.

Since adding the flour directly to a hot pan can cause it to clump, dissolve it in water first.

④ Add the peanuts and millet

Once the rice is tender, start by adding the peanut butter mixed with water.

Once you've mixed it well, gradually add the millet flour dissolved in water.

If you add it while stirring constantly with a wooden spoon or whisk, you'll get a smooth finish.

Continue to simmer over low to medium-low heat for about 5 minutes.

It gradually thickens until it becomes a little thicker than regular rice porridge.

⑤ Add milk and sugar

Now, add the milk, sugar, and salt.

Stir frequently and heat over low heat for about 2 to 3 minutes."

We recommend adding the milk little by little rather than all at once to adjust the consistency.

⑥ Add the lemon

Finally, add 1 to 2 teaspoons of lemon juice, if desired.

You can add lemon if you like, but if you don't like sour flavors, you don't have to add it.
