How to Make Xiaolongbao
Ingredients (makes about 20 servings)
An
- Ground pork … 250g
- Ginger (minced)… 1 teaspoon
- Green onions (finely chopped)… 2 tablespoons
- Soy sauce … 1 tablespoon
- Sake … 1 tablespoon
- Sesame oil … 1 teaspoon
- Salt … a pinch
Soup Jelly
- Pork broth … 200ml
- Powdered gelatin … 5g
Skin
- Flour (all-purpose or cake flour)… 200g
- Water … approximately 100ml
How to make them
① Make the soup jelly

- Add gelatin to the warmed pork broth and dissolve thoroughly.
- Pour into a bat or similar container.
- Chill in the refrigerator for 1 to 2 hours until firm.
- Once solidified, chop into small pieces about 5mm square.
Points:The finer the cut, the easier it is to wrap!
② Make the An

- Place the ground pork in a bowl.
- Add ginger, green onions, and seasonings.
- Mix well until sticky (1–2 minutes).
- Finally, add the carved soup jelly and stir gently.
Gently mix the jelly without crushing it.
③ Make the skin

- Put the flour in a bowl.
- Gradually add water while mixing.
- Once it forms a cohesive mass, knead for 5 to 10 minutes.
- Cover with plastic wrap and let rest for 20 to 30 minutes.
Resting makes it easier to grow.
④ Stretch the skin

- Roll the dough into a log and divide it into 20 equal pieces.
- Roll it into a ball and lightly crush it in the palm of your hand.
- Roll out the dough with a rolling pin, making the center slightly thicker and the edges thinner (8–9 cm in diameter).
Thicker in the center means less likely to tear!
⑤ Wrap

- Place about 1 tablespoon of filling in the center of the skin.
- Create pleats gradually from the edge.
- Finally, twist it tightly to close.
Close with zero gaps to prevent soup leakage.
⑥ Steam

- Line the steamer with parchment paper (pierce holes in it).
- Arrange the xiaolongbao with space between them.
- Steam for 7 to 8 minutes after steam rises over high heat.
Be careful not to oversteam, as this makes the skin more prone to tearing.
How to eat
- Place on a spoon.
- Break the skin slightly and sip a little soup.
- Served with black vinegar and shredded ginger.
