The History of Jollof Rice

  • Rice (long grain recommended) ... 2 cups (approx. 300g)
  • Chicken bouillon … 500 ml
  • Bay leaf ... 1 leaf
  • Time (drying) ... 1 teaspoon
  • Curry powder ... 1 teaspoon (to taste)
  • Salt ... appropriate amount
  • Black pepper ... appropriate amount

【Ingredients】

  • Chicken (thigh meat or wings) ... 300g
  • Vegetables (carrots, green beans, green peas, etc.) ... appropriate amount

How to make them

1. Make the tomato sauce

  1. Chop the tomato, red bell pepper, half an onion, and chili pepper, then blend in a mixer until pureed.
  2. Heat oil in a pot and simmer the purée over medium heat for 10-15 minutes to evaporate the moisture.
    Points:If you thoroughly remove the moisture, the rice will not become sticky.

2. Prepare the chicken

  1. Season the chicken with salt, pepper, and thyme.
  2. Sear the surface in a frying pan and cook lightly (it's OK if it's not completely cooked through).

3. Simmer with rice

  1. Heat 1 tablespoon of oil in another large pot and fry the remaining onions.
  2. Add tomato sauce and stir fry lightly, then add bouillon, bay leaf, and curry powder.
  3. Add the washed rice and mix lightly, then top with the chicken and vegetables.
  4. Cover and cook on low heat for 20-25 minutes (adjust according to the type of rice).

4. Steaming & Finishing

  1. Turn off the heat and steam for about 10 minutes.
  2. Gently mix everything together, taste, and adjust with salt and pepper.
  3. Serve on a plate and add salad or fried plantains (fried bananas) as desired.

  • If you use long-grain rice (such as basmati rice or Thai rice), the rice will turn out fluffy.
  • Make sure to thoroughly evaporate the moisture from the tomato sauce.
  • After cooking, the “okoge” (called party rice in the local area) at the bottom of the pot is exquisite.
