What is Hainanese Chicken Rice?

Hainanese Chicken Rice is one of Singapore's most iconic national dishes.

It’s a simple dish consisting of boiled chicken served with rice cooked in the broth from the chicken.

In some circles, it is sometimes referred to as “Singapore Chicken Rice”.

While it may not be flashy, it is positioned as a “dish that lets you savor the ingredients” thanks to its umami, aroma, and_ simple preparation.

From hawker centers to high-end restaurants, it is beloved throughout Singapore as a dish that symbolizes the country.

Origin of the Name

The name derives from Hainan Island (Hainan Province) in southern China, where it originated.

Hainan Island is a resort island located at the southernmost tip of China.

As I will explain later, the origins of Hainanese Chicken Rice are believed to lie in this chicken dish from Hainan Island .

That is why the name includes “Kainan.”

Chicken rice literally means “chicken-flavored rice.”

The Flavor of Hainanese Chicken Rice

The appeal of Hainanese Chicken Rice lies in its mild flavor, which brings out the chicken's natural richness to the fullest.

The boiled chicken is moist and tender, with a rich, savory flavor and a natural sweetness from its own fat.

Rice cooked in chicken broth and ginger and garlic has a rich, deep flavor and aroma.

Another feature is the variety of flavors offered by three different sauces.

・A chili sauce with a strong spicy and tangy flavor

・Ginger sauce that enhances the aroma of ginger

・Dark soy sauce with a rich, sweet flavor

Depending on how you combine the ingredients, you can enjoy a variety of flavors, from light and refreshing to spicy or sweet and spicy.

Thai Khao Man Gai

Thailand has a classic, popular dish called Khao Man Gai.

This Khao Man Gai is a dish consisting of tender boiled chicken served over rice cooked in chicken broth.

It's very similar to Hainanese Chicken Rice.

Since both dishes trace their origins to Hainanese chicken cuisine, that’s why they’re so similar.

However, while Hainanese Chicken Rice is characterized by its fragrant rice and a variety of sauces, Khao Man Gai is characterized by miso-based sauces and sweet-and-spicy sauces.

We recommend this to anyone looking for something light or who enjoys ethnic cuisine.

The History of Hainanese Chicken Rice

As mentioned earlier, the most widely accepted theory is that Hainanese Chicken Rice originated on Hainan Island in China.

The dish believed to be the origin of this dish is “White Cut Chicken (Pai Chi Ji).”

White Cut Chicken is a classic dish known as a staple of “Cantonese cuisine,” a general term for the famous dishes of Guangdong Province, China.

In Hainan Province, we used Wenchang chicken raised in the vicinity of Wenchang City.

This dish is a traditional dish made by boiling chicken and serving it with simple seasonings.

Known for its tender meat and rich, savory fat, it was traditionally served at celebrations and banquets in Hainan Province.

From the late 19th century to the early 20th century, many Hainanese overseas Chinese migrated to Southeast Asia in search of work.

Many of them run restaurants, and it is through these establishments that dishes such as White Cut Chicken and Wenchang chicken are passed down.

And by adapting the cuisine of their hometown to local tastes, it gradually takes on its modern form.

Overseas Chinese and Chicken Dishes

The Chinese immigrants who moved to Singapore did not simply recreate their traditional cuisine; they incorporated local ingredients and culinary traditions, allowing it to evolve.

The main changes are

  • Cooking rice in the water used to boil it
  • Add garlic, ginger, and chicken fat for flavor
  • Serve with chili sauce or dark soy sauce

Above all, cooking the rice in the water used to boil it was crucial.

This is because it transforms a simple boiled chicken dish into a dish characterized by “a dish in which the rich flavor of the chicken permeates the rice.”

In the 1920s and 1930s, it became popular in Singapore's hawker centers.

As a result, it gained popularity as an inexpensive, nutritious, and easy-to-eat dish.

After World War II, it became a beloved local staple because it helped people get by during difficult economic times.

Hainanese Chicken Rice and Hawker Stalls

Singapore's unique hawker culture has played a key role in the popularity of Hainanese Chicken Rice.

A hawker is a street food stall, and it was also a place where immigrants served inexpensive, affordable meals

Immigrants from Hainan opened a restaurant here specializing in Hainanese Chicken Rice,

  • More tender chicken
  • Rice with a richer aroma
  • Secret Sauce

and we’ll hone those skills and compete.

As a result, Hainanese Chicken Rice took on its current form and became widely popular among the general public.
