How to Cook Köttbullar
Ingredients
Meatballs
- Ground beef … 250g
- Ground pork … 250g
- Onion … 1/2 (about 100 g)
- Breadcrumbs … 50g
- Milk … 100ml
- Egg … 1
- Salt ... 1 teaspoon
- Black pepper ... a pinch
- Nutmeg … 1/4 teaspoon
- Butter … 20g
Cream sauce
- Butter … 20g
- All-purpose flour … 20g
- Beef or chicken broth … 300 ml
- Heavy cream … 100 ml
- Salt ... a pinch
- Black pepper ... a pinch
Side dish
- Mashed potatoes … as needed
- Lingonberry jam (or cranberry jam if unavailable)… to taste
How to cook them
① Sauté the onions

- Finely chop the onion.
- Put 20 g of butter in a frying pan and heat over medium heat.
- Add the onions and sauté for 5 to 7 minutes, until they turn a light golden brown.
- Turn off the heat and let it cool.
If you mix it into the meat while it's still hot, the fat will melt, so be sure to let it cool first.
② Making seeds

- Place the breadcrumbs and milk in a bowl and let them sit for about 5 minutes to soften.
- Add ground beef, ground pork, eggs, sautéed onions, salt, pepper, and nutmeg.
- Mix thoroughly for 2 to 3 minutes until the mixture becomes sticky.
Just like with hamburger patties, mixing until the mixture turns white will make it easier to shape.
③ Roll into a ball

- Wet your hands a little.
- Roll the dough into balls about 3 cm in diameter.
- Makes about 24 to 28 pieces.
If you cut them to the same size, they will cook evenly.
④ Bake

- Heat a frying pan over medium heat.
- Arrange the meatballs.
- Roll it around to brown it evenly.
- Reduce the heat to low and cook for another 4 to 5 minutes.
It’s done once the heat has reached the center and clear juices run out.
⑤ Make the cream sauce

- Take out the meatballs.
- Add 20 g of butter to the same frying pan.
- Add the all-purpose flour and stir-fry for 1 minute.
- Stir while gradually adding the broth.
- Add the heavy cream.
- Once the mixture has thickened, season with salt and pepper.
⑥ Plate the dish

- Place the meatballs on a plate.
- Pour the cream sauce over it.
- Serve with mashed potatoes.
- Top it with some lingonberry jam, and it’s ready to serve.
初心者向けのコツ
- A beef-pork blend turns out more tender than 100% beef.
- It’s better not to make the meatballs too big, as that makes them less likely to fail.
- Add the bouillon a little at a time to prevent the sauce from clumping.
- Serving it with jam is the traditional Swedish way, as it brings out the savory flavor of the meat and the richness of the cream sauce.
